Step in How to “Khinkali”
Step by step guide of how to make Georgian dumpling – Khinkali
Step 1 – Prepare Ingredients: Dough – 1.4 kilos of flour, Filling – 700 grams of ground beef and pork mix, salt, half tsp of dried red pepper, quarter tsp ground caraway seed, 2 small onions (optional) and 500 ml of water.
Step 2 – Prepare a dough, it should be formed into the shape of a ball.
Step 3 – Divide it into two pieces, sprinkle a work surface and take one part of the dough with flour and knead (very firmly), then fold it.
Step 4 – Roll out the dough until it is about 1/3 of an inch thick. Cut out circles of about 2.5 inches in diameter with a drinking glass.
Step 5 – Mix the ingredients for the feeling by hand in a bowl, add salt and pepper
Step 6 – Use your thumbs and index fingers to make an accordion-type fold all around the outside (as shown in the picture). Start folding, as it will become easier with practice! 19 folds are considered to be ideal.
Step 7 – Carefully place the dumplings into a deep pan of boiling salty water, about 10-15 at a time, after quarter an hour Khinkali is ready.
Step 8 – Khinkali is served hot with no garnish other than black pepper. Don’t spill it and Enjoy!
